Yes, it is possible to put 3" exhaust in your 1969 Ford Mustang Convertible!  Did it without having to take out the 'square' floor reinforcement plate that comes between the frame rails on the bottom.  Here are some pictures of how this was accomplished on my car.

Mufflers used are Delta Force One Chamber Race Mufflers (Summit Racing Part Number: FLO-9430119).  They are very compact and also offset, which was perfect for the tight constraints on this car.  This was a little loud to have just the one chamber mufflers, so I added in a glass pack in line with the exhaust as well.  The sound is AMAZING!

For headers, I ordered some ceramic coated ones from Ford Powertrain Applications (Part Number: 9430-390J).  They fit perfectly and leave just the right spacing between the transmission and the chassis.  This is tough for 3" out on an FE block and also very tough to find.  FPA incorporates a 'Tri-Y' design in order to accomplish this.
